Rhubarb and Apple Crumble

Another apple recipe to use them up! I absolutely love fruit crumbles, especially with custard. My favourite has always been rhubarb, so instead of just making an apple crumble I decided to mix in some rhubarb also.


1 lb rhubarb, chopped
1 lb apples, peeled and chopped
1/4 cup sugar
1 tbsp butter
1 tbsp vanilla extract
1 tbsp cornstarch

For the crumble topping:
1 cup all purpose flour
1 tsp baking powder
1/2 cup butter, diced
3 tbsp sugar
3 tbsp brown sugar

Preheat the oven to 375

Place the rhubarb and apples into a pan on medium heat, with the 1/4 cup sugar, butter, vanilla and cornstarch for about 5 minutes. Transfer to baking dish

To make the crumble topping, place the flour and baking powder in a bowl and rub in the cold butter until it looks like soft crumbs

Stir in the sugars and spread evenly over the fruit, bake for 35-45 minutes
