Mango Lime Pork Chops

I have a little obsession with those little cooking magazines you find at the checkout at the grocery store, and when I saw one with this recipe pictured on the front cover last week I just had to buy it.

The hubby and I both loved the salsa so much that we have already made it for a second time, although we both thought the marinade for the pork chops had too much soy sauce in it.



Marinade:
1/2 cup lime juice
1/2 cup soy sauce
2 tbsp honey
2 garlic cloves, minced
6 boneless pork loin chops

Salsa:
2 mangoes, peeled and cubed
4 kiwi fruit, peeled and cubed
1/2 cup chopped red bell pepper
1/2 cup chopped onion
1 jalapeno, seeded and minced
1 tbsp each lemon and lime juice
2 tsp fresh mint
1 tsp honey
1/4 tsp salt

1. In a large plastic bag, combine the marinade ingredients, add pork chops, turn to coat and refrigerate overnight. Drain and discard marinade, grill chops over medium heat for 6-7 minutes a side

2. In a bowl, combine the salsa ingredients, cover and refrigerate before serving.
