Orange Chicken

I found this recipe on another blog a few months ago (I don't remember which one though, sorry) and this weekend I just so happened to have all the ingredinats for it, so we decided to try it. I made a slight mistake by putting the full teaspoon of red pepper flakes into it, as it turned out out a little too spicy!


Ingredients:
2 boneless skinless chicken breasts
1 onion
1 green bell pepper
1 15 oz can of mandarin oranges
4 tbsp olive oil
Flour for coating chicken
1 tsp garlic powder
2 tbsp soy sauce
1 cup orange juice
1 tsp red pepper flakes (optional)

Cut chicken into 1 inch pieces and lightly coat with flour. Heat oil and add chicken, cook until lightly browned and crispy.

Add chopped onion and green pepper to chicken, cook for a few minutes, add mandarin oranges, the garlic powder, soy sauce, red pepper flakes and orange juice. Reduce heat to medium low, cover and let simmer for 35-40 minutes until the sauce has thickened.
